Health Benefits in Every Bite!

Broccoli is a powerhouse of nutrients. It's packed with vitamins C and K, fiber, and numerous antioxidants. Consuming broccoli regularly can contribute to better digestion, improved immunity, and overall health. Its slightly sweet, earthy flavor pairs wonderfully with a variety of ingredients, making it a great choice for salads.

Tahini, made from ground sesame seeds, is a staple in Middle Eastern and Mediterranean cuisines. Not only does it add a rich, nutty flavor to dishes, but it's also loaded with essential nutrients. Tahini is a great source of healthy fats, protein, and important minerals like calcium, magnesium, and iron. Its high antioxidant content provides anti-inflammatory benefits, contributing to overall wellness.

Ingredients:

For the salad:

- 4 cups broccoli florets, chopped into bite-sized pieces

- 1/2 cup red bell pepper, finely chopped

- 1/2 cup cherry tomatoes, halved

- 1/4 cup red onion, finely chopped

- 1/4 cup sunflower seeds or chopped almonds

- 1/4 cup fresh parsley, chopped

For the dressing:

- 1/4 cup tahini

- 1/4 cup fresh lemon juice

- 1 tablespoon olive oil

- 1 clove garlic, minced

- 1 teaspoon Dijon mustard

- 2-3 tablespoons water (to thin the dressing)

- Salt and pepper to taste

Directions:

1. Prepare the broccoli: Blanch the broccoli florets in boiling water for 1-2 minutes until they turn bright green and are slightly tender. Immediately transfer the florets to a bowl of ice water to stop the cooking process. Once cooled, drain the broccoli well.

2. Combine salad ingredients: In a large mixing bowl, combine the blanched broccoli, red bell pepper, cherry tomatoes, red onion, sunflower seeds or chopped almonds, and fresh parsley.

3. Make the dressing: In a small bowl, whisk together the tahini, fresh lemon juice, olive oil, minced garlic, and Dijon mustard. Add water a tablespoon at a time until the dressing reaches your desired consistency. Season with salt and pepper to taste.

4. Toss the salad: Pour the dressing over the broccoli mixture. Toss everything together until the broccoli is well coated with the dressing.

5. Chill: Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together.

6. Serve: Give the salad a good stir before serving. Enjoy it cold!

I hope you enjoy this delicious and healthy salad, and let it be a reminder that nutritious food can also be incredibly flavorful and satisfying. Bon appétit!
