Garlic Lemon Swiss Chard Sauté

Swiss chard often gets overlooked, but it’s one of the most nutrient-dense greens you can add to your plate. Packed with magnesium, potassium, and vitamin K, it supports detoxification, heart health, and bone strength. The lemon not only adds brightness but also helps enhance iron absorption — making this simple side dish both delicious and nourishing.

Ingredients:

  • 1 large bunch Swiss chard (rainbow or green), stems and leaves separated

  • 2 tbsp extra-virgin olive oil

  • 3 garlic cloves, thinly sliced

  • Zest and juice of ½ lemon

  • Salt and pepper, to taste

  • Optional: pinch of red pepper flakes or 1 tsp apple cider vinegar for brightness


Instructions:

  1. Prep the chard:

    Rinse thoroughly. Slice stems into small pieces and roughly chop the leaves.

  2. Cook stems first: In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.Add the chard stems and cook 3–4 minutes until slightly softened.

  3. Add leaves: Toss in the chard leaves, season with salt and pepper, and cook until just wilted (about 2–3 minutes).

  4. Finish and serve: Remove from heat. Stir in lemon zest and juice. Add red pepper flakes or vinegar if using.Taste and adjust seasoning as needed.


Serving Ideas:

Pair it with grilled chicken, salmon, or quinoa for a balanced meal. You can also stir leftovers into scrambled eggs or a warm grain bowl the next day.
