Honey Lime Chicken Thighs: An Easy High-Protein Dinner

Summer can be busy, and sometimes you just need a dinner you can pull together in minutes. This is one of those meals. If you keep a handful of basic spices in your pantry, you probably already have most of what you need, and these are spices you'll use over and over again in other meals.
These Honey Lime Chicken Thighs are perfect for a busy summer night when you want to throw something on the grill without a lot of prep. And when the weather gets colder, the same recipe can easily be made in the oven, making it a great meal to keep in your rotation year-round.
It also checks all of my boxes: plenty of protein, real-food ingredients, lots of flavor, and something the whole family will actually eat.
Chicken thighs work especially well here because they're flavorful, affordable, and much harder to dry out than chicken breasts. Fresh lime, a little honey, garlic, cilantro, and a handful of simple spices create a marinade that's sweet, tangy, and just a little spicy.
Pair the chicken with rice and a big colorful salad or some roasted vegetables, and you have a simple, balanced meal without spending hours in the kitchen.

Ingredients (Serves Approx. 6)
3 lbs. boneless, skinless chicken thighs
Juice of 2 limes
3 tablespoons honey
3 tablespoons extra-virgin olive oil
5 cloves garlic, minced
1 teaspoon sea salt
1½ teaspoons black pepper
1½ teaspoons onion powder
1½ teaspoons paprika
1½ teaspoons cumin
½ teaspoon cayenne pepper, or to taste
½–¾ teaspoon red pepper flakes, optional
¼ cup fresh cilantro, chopped
Instructions
Make the marinade.
In a large bowl, whisk together the lime juice, honey, olive oil, garlic, salt, pepper, onion powder, paprika, cumin, cayenne, red pepper flakes, and cilantro.
Marinate the chicken.
Add the chicken thighs and toss until well coated. Cover and refrigerate for at least 30 minutes or up to several hours. Because lime juice is acidic, I wouldn't leave the chicken marinating overnight.
Cook the chicken.
On the grill: Preheat the grill to medium-high heat. Grill the chicken for approximately 5–7 minutes per side, depending on thickness, until nicely browned and cooked through.
In the oven: Preheat the oven to 425°F. Arrange the chicken on a large sheet pan without overcrowding. Bake for approximately 25–30 minutes. Broil for the final 1–3 minutes if you'd like those delicious caramelized edges.
Check the temperature.
Chicken is safe to eat at an internal temperature of 165°F. Chicken thighs can become even more tender when cooked closer to 175°F. Let the chicken rest for about 5 minutes before serving. Finish with an extra squeeze of fresh lime and chopped cilantro if desired.
Build a Balanced Bowl
One of the easiest ways to turn this chicken into a complete meal is to build a bowl around it.

An extra squeeze of lime
You could also add black beans for additional fiber or swap the rice for roasted sweet potatoes.
Tip: Make the full 3-pound batch even if you don't need it all for dinner. The leftover chicken is fantastic in salads, bowls, wraps, or alongside vegetables for lunch the next day.
