Grass fed beef is rich in anti-inflammatory omega 3 fatty acids as well as conjugated linoleic acid (CLA). Ingredients:
Meatballs
2 pounds grass fed ground beef
1 pound sweet italian sausage
3 celery stalks, diced
1 white onion, diced
2 carrots, diced
3 eggs
1 tbsp oregano
1 tbsp garlic powder
sea salt and black pepper to taste
Sauce:
2 tablespoons olive oil
1 onion diced
3 cloves of garlic, minced
1 (28 ounce) can crushed tomatoes
1 (16 ounce) can sauce
½ teaspoon dried oregano
1 bay leaf
Sea salt and black pepper to your liking
fresh basil chopped
Directions:
Preheat oven to 400.
Use your hands to mix all ingredients together. Form meatballs about the size of golf balls. Place on sheet pan or if not forming, place in muffin tins to keep form. Bake for 20 minutes or until golden and cooked through.
Prepare sauce, and add meatballs to sauce when cooked. Cook on low heat to absorb moisture from sauce.
Serve alone or with Spaghetti squash, or zucchini noodles.
