A simple recipe that you can throw together when you don't have a plan for dinner. #beef
1 large zucchini
2 tablespoons butter or ghee
1 large onion, finely chopped
2 large carrots, finely chopped
2 large stalks of celery, finely chopped
2 cloves of garlic minced
1 pound ground grass fed beef
1 pound sweet italian pork sausage
1 can full fat coconut milk
6 ounces tomato paste
Season with sea salt and pepper
Preheat oven to 375 °F.
In a large skillet over medium high heat, melt the butter or ghee, saute onions, carrots, celery until translucent. Add the garlic and cook for an additional minute.
In a separate pan brown the ground beef and sweet italian chicken (or pork) sausage. Once browned, add the meat mixture to the vegetables. Add coconut milk and tomato paste. Simmer over medium-low heat for 30 minutes or more.
Add sea salt and black pepper to taste. Serve over zucchini noodles.
