Homemade Coleslaw

Although low in calories, cabbage is packed with nutrients. Just one cup contains vitamins K, C, B-6, and folate as well as minerals including manganese, calcium, potassium, and magnesium.


Additionally, cabbage may improve your digestive health as it is a good source of insoluble fiber and soluble fiber. Insoluble fiber helps keep the digestive system healthy by adding bulk to stools and promoting regular bowel movements, while soluble fiber helps feed the beneficial bacteria in the gut. Cabbage also contains powerful antioxidants, including polyphenols and sulforaphane which have an anti-inflammatory effect on your body. #sides

Ingredients:

  • 1/2 large green cabbage

  • 1/2 large purple cabbage

  • 3 large carrots peeled

  • ¼ cup plus 2 tablespoons extra virgin olive oil

  • ¼ cup mayonnaise

  • 1 ½ teaspoon salt

  • 2 tablespoons lemon juice

  • 1 tablespoon honey (optional or less can be used)


Directions:

  1. Shred the cabbage with a thin slicing blade or the food processor and add it to the mixing bowl.

  2. Grate carrots then add to cabbage.

  3. Combine the rest of the ingredients in a bowl and whisk together until well blended to make the dressing.

  4. Pour the dressing over the salad mix. Let it stand for 15 minutes before tasting and adjusting the seasonings.
