Ingredients:
2 pounds raw shrimp, peeled and deveined
2 tablespoons coconut oil
3 cloves garlic
1 red pepper, diced
2 jalapeños, diced
¼ cup fresh cilantro, chopped
1 can diced tomatoes
1 can coconut milk
1 tablespoons Sriracha
1 medium lime, juiced
salt and pepper to taste
Directions:
Heat oil in medium to large dutch oven.
Saute onions, and peppers for 2-3 minutes, until onions are translucent.
Add garlic, tomatoes, shrimp, and cilantro and simmer until shrimp turns opaque, 3-5 minutes.
Pour in the coconut milk and hot sauce and simmer for another 3-5 minutes. to allow flavors to combine.
Finish with lime juice and season with salt and pepper.
Garnish and Serve: Scatter chopped cilantro over the top, adding a pop of color and freshness to the dish.
Serve hot, either on its own or atop a bed of fluffy rice or cauliflower rice.
