When you are in the mood for something sweet, but still want to stay on track, try this chocolate avocado pudding... #dessert
1 medium avocado (peeled and pitted)
1/4 cup cocoa powder
1-2 tablespoons maple syrup or raw honey (start with one and you can always add more if you need more sweetness)
1 teaspoon vanilla
pinch of sea salt
You may need a non-dairy such as coconut milk, almond milk or cashew milk, depending on the consistency - a few tablespoons can be added at a time
Place all ingredients in a blender or food processor in the order above. You can also put in a bowl and use an immersion blender. All will work.
Blend for 2-3 minutes until smooth. If it is too thick you may need to add a non-dairy milk a little at a time to get the right consistency. Just keep in mind it will thicken when you chill it in the refrigerator.
Spoon the pudding into ramekins or small bowls, cover and chill in the refrigerator until ready to serve. (Serves 2)
