If you belong to a CSA, have a backyard garden or go to a local farm stand or the market, you can get your hands on some local zucchini. Try this easy recipe to be served alongside any dish. Goes well with grilled steak, burgers, chicken, or can be served as a snack or appetizer.
Zucchini is very easy to overcook, so keeping an eye on it while it is roasting is a good idea, or set your timer! It is best baked at a high temperature for a short amount of time, which allows it to slightly caramelize, without getting mushy. In this recipe, your baked zucchini will only be in the oven for 7-8 minutes, including the broil section to roast it to perfection! #sides
Ingredients:
2 medium zucchini
1/2 cup grated parmesan
1 teaspoon garlic powder
2 tablespoons avocado oil
1 teaspoon salt
1/2 teaspoon black pepper
Directions:
Preheat oven to 450°F
In a large bowl toss the zucchini with avocado oil, salt, pepper and garlic powder.
Arrange on a baking sheet, top with grated parmesan cheese and bake on center rack for 5 minutes.
Next broil the zucchini for 2-3 minutes or until cheese is golden brown.
